I’m just going to say it how it is. I don’t really like football. I just can’t manage to get in to it. BUT let me tell you what I can get into. Football party food! Yes. I love any excuse to make yummy appys. Especially dips.
So I figured I would celebrate the beginning of football season with a yummy new recipe, perfect to serve to a game day crowd. Green chilis are one of my loves, and when you mix them with creamy cheese and a touch of garlic throw them in the microwave you get a little piece of heaven in the form of a creamy dip!
The recipe is simple and I love that you can microwave it without sacrificing flavor or texture. It makes it super quick and easy to throw together and the guest will rave!
Here is the recipe:
Green Chili Cheddar Dip
- 8 oz Cream Cheese
- 4 oz Green Chilis (1 small can)
- 4 oz Sharp Cheddar Cheese, grated
- 1/2 tsp Garlic Powder
- In a medium bowl microwave the cream cheese for 30-60 seconds or until it is softened.
- Mix in the green chilis, cheddar, and garlic. Mix well.
- Microwave the dip for 45 seconds, stir and then an additional 45 seconds or until it is heated through.
- Alternately, you can spread the mixture in a baking dish and bake at 350 degrees F for 20-30 min or until heated through.
- Serve with tortilla chips and enjoy the game (or the food!)

We put a chicken graduals, Louisiana hot sauce and worcestershire sauce also. It adds a little kick to it.
