Hi everyone! It’s Dee at Meatloaf and Melodrama, and I am thrilled to be sharing a very quick and easy summer dessert with all of you today! I love desserts, but in warm weather, I’m all about keeping things on the lighter side. And, I usually avoid using the oven at all costs. My kids love blueberries and strawberries, and since we have Memorial Day coming up, I thought it would be fun to give these berries a patriotic twist. So, I added a bit of vanilla ice cream and whipped up this easy Summer Berry Parfait.
Blueberries and strawberries are tasty enough on their own, but mixing them with ice cream just takes these gorgeous summer fruits to a whole new level. Plus, no one I know would ever turn down the chance to indulge in some ice cream!
With just three ingredients, you’ll be out of the kitchen in no time, and when you serve the dessert in a mason jar, it becomes special enough for company.
Summer Berry Parfait
Whenever I make these parfaits, I find that the ice cream gets soft very fast by the time I’m done layering everything. So, I usually pop the jars back into the freezer for a few minutes before it’s time to serve dessert. The ice-cold jar keeps everything nice and frosty, especially if you’re eating outside!
And, if you’re making these berry parfaits for young kiddos, you can use smaller jars or even clear glasses instead.
Summer Berry Parfait
Ingredients
- 1 pound strawberries
- 1 pint blueberries
- Vanilla ice cream
- Whipped cream
Instructions
- Wash the berries and pat dry.
- Slice strawberries into small pieces.
- In clean mason jars, add a layer of blueberries to the bottom.
- Add a thin layer of ice cream over the blueberries.
- Add a layer of strawberries, and repeat until the jar is filled.
- Top with whipped cream and additional fruit, if desired.
