Cheesy Chicken Broccoli and Rice Casserole & Holiday Acorn Box

A delicious twist on a holiday favorite! Serve it with chicken as a meal, or without chicken as a side dish.

  • 2 boneless skinless chicken breasts (cooked and cubed OPTIONAL)
  • 2 cans cream of mushroom soup
  • 2 cups rice cooked
  • 2 bags frozen broccoli finely chopped
  • 1 medium onion finely chopped
  • 16 oz jar process cheese
  • 1/4 cup butter
  • salt and pepper to taste


  • If making with chicken, pre cook and cube the chicken and set aside.
  • Steam rice per instructions on the bag, then chop finely.
  • Chop onion and saute for 3 minutes with 1/4 cup butter.
  • Preheat oven to 350.
  • In a medium bowl, add rice, broccoli, chicken, soup, cheese sauce, onion, and stir well.
  • Pour into a casserole dish and then sprinkle with salt and pepper.
  • Bake for 30 minutes. Serve warm.
