2 boneless skinless chicken breasts (cooked and cubed OPTIONAL) 2 cans cream of mushroom soup 2 cups rice cooked 2 bags frozen broccoli finely chopped 1 medium onion finely chopped 16 oz jar process cheese 1/4 cup butter salt and pepper to taste
If making with chicken, pre cook and cube the chicken and set aside.
Steam rice per instructions on the bag, then chop finely.
Chop onion and saute for 3 minutes with 1/4 cup butter.
Preheat oven to 350.
In a medium bowl, add rice, broccoli, chicken, soup, cheese sauce, onion, and stir well.
Pour into a casserole dish and then sprinkle with salt and pepper.
Bake for 30 minutes. Serve warm.
