Ingredients
  

  • 5 oz pineapple tidbits
  • 5 sweet potatoes cooked
  • 1 cup pecans candied/chopped
  • 2 tbsp heavy cream
  • 1/4 cup butter unsalted
  • 2 eggs
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 cup white sugar

Instructions
 

  • Heat oven to 350.
  • In a medium mixing bowl, mix sweet potatoes, pineapple chunks, heavy cream, melted butter, cinnamon, sugar, salt, heavy cream, 1/4 cup of chopped candied pecans, and eggs. Stir until completely mixed.
  • Take the sweet potato mixture and place in a casserole dish. Cover the top with the remaining chopped candied pecans, and bake in the oven for 35 minutes.
  • Allow the dish to cool for 5 minutes before serving.

Notes

  1. Serve as a side dish during the holidays. 
  2. You have to trust me on this one. Reheat leftovers and serve with ice-cream! It really does taste like a dessert.
