Ingredients
  

  • Black beans from the instant pot
  • 1 chopped jalapeño
  • 1 tomato chopped
  • 1/3 cup onion
  • 2 cloves garlic
  • 1 tbsp cilantro chopped
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 cup cheddar cheese
  • 1/2 lime
  • Chips

Instructions
 

  • Chop veggies and place all ingredients into the bowl with black beans.
  • Stir well squeezing the lime over the salsa.
  • Place in the fridge and allow to sit for a 1/2 hour.
  • Arrange chips on the baking sheet placing 3/4 of the cheese over chips.
  • Place under broiler until chips are golden and cheese is bubbly.
  • Place salsa over chips and garnish with remaking cheese.
  • Squeeze lime over nachos prior to serving.
