1 1/2 lbs lean ground beef 1 cup ketchup 1/2 cup brown sugar 3/4 cup milk 2 eggs 1 1/2 tsp salt 1 tsp oregano 1/2 tsp ground black pepper 1 small onion, chopped 1/2 green bell pepper, chopped 3/4 cup crushed saltine crackers
Preheat oven to 350 degrees.
Press the brown sugar into the bottom of the pan.
Mix the meat, eggs, onion, peppers, seasoning, crackers, and milk.
Lightly pack the pan with the meatloaf mixture.
Add the ketchup glaze to the meatloaf. Bake uncovered for 1 hour 10 minutes, or until juices run clear.
Allow the meatloaf to rest for 10 minutes before slicing and serving.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
Best served with mashed potatoes and green beans for the complete meal.
