Red Velvet Cake Mix Cookies are the perfect, easy treat when you're in a time crunch and want a delicious, warm, soft, and chewy cookie to snack on. Only 3 ingredients!
In a medium mixing bowl add the mix, eggs, and vegetable oil. Mix well with a wooden spoon or spatula. Lastly, add the white chocolate chips to the cookie dough.
Scoop 1″ cookie dough balls or a heaping Tablespoon of dough and then place 1 inch balls on a prepared baking sheet.
Bake in the preheated oven for 10-12 minutes (I start checking the cookies between 8-10 minutes) or until the edges of the cookies start to brown. Carefully remove the baking sheet from the oven.
Transfer the cookies from the baking sheet after 1 minute, and place them on a wire rack for 5-10 minutes before serving.

Store red velvet cookies and red velvet sandwich cookies in an airtight container in the fridge for up to 3 days.
Freeze baked cookies on a cookie sheet or cooling rack, and then store them stacked in an airtight container with parchment paper in between. You can store them in the freezer for up to 3 months. Heat in the microwave for 30-45 seconds when you're ready to snack.
If you want extra-large Red Velvet cookies, use a small ice cream scoop instead of a cookie scoop. Make sure you add extra chocolate chips!
