1 1/2 cups all purpose flour 1/2 cup white sugar 1/3 cup light brown sugar 1 teaspoon baking powder 2 bananas ripe, mashed 1/2 teaspoon vanilla flavoring 1 egg 1/3 cup unsalted butter, melted
Combine the flour and baking powder in a large bowl and set aside.
In a medium sized mixing bowl, use a hand mixer to cream together the butter, white sugar, and brown sugar.
Add the egg and vanilla extract into the butter and sugar mixture. Mix well.
Pour the butter and sugar mixture into the dry ingredients and use a spatula to mix well.
Gently fold in the mashed banana to the batter until just combined.
Using a large scoop to fill the silicone cups about ¾ of the way. If using a small muffin tin, fill paper liners ¾ of the way.
Gently place into the basket. Air fry at 350 for 6-8 minutes.
Carefully remove the banana muffins from the air fryer basket and allow them to cool slightly on a wire rack before serving.
