Ingredients
  

  • 2 Tablespoons olive oil extra virgin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • 1 eggplant

Instructions
 

  • Slice eggplant into 1” pieces.
  • Prepare the air fryer basket with nonstick cooking spray if needed.
  • Add all eggplant pieces into a small shallow bowl with extra virgin olive oil and toss until eggplant pieces are fully coated.
  • Add the seasonings to the eggplant and toss until they are coated with the seasonings.
  • Put the seasoned eggplant in a single layer in the air fryer basket.
  • Air fry eggplant at 350 Fahrenheit/175 Celcius for 13-15 minutes, use tongs for tossing them in the basket halfway through the cook time. The tops should be golden brown.
  • Top with fresh parsley before serving

Notes

This Air Fryer Eggplant Recipe was cooked using a Cosori Air Fryer. You're Air Fryer may cook differently and you may need to add or remove cooking time to ensure eggplant is fully cooked. For best results, keep a close eye on the recipe if this is the first time making it so you know how to adjust the time to your particular air fryer.
If you are making eggplant wedges, you want to cook them for about 15 minutes. If you're cooing larger pieces of eggplant slices, you may need to cook the eggplant longer.
Serve this crispy eggplant with your favorite dipping sauce. and toppings such as parmesan cheese.
