Air Fryer Scalloped Potatoes

Air fryer scalloped potatoes are an easy, cheesy side dish. The flavors are amazing and this simple recipe is soon to be a family favorite.

Ingredients
  

  • 3 medium Russet potatoes
  • 4 ounces Queso block cheese
  • 4 ounces Cream cheese
  • 3 Tablespoons Butter unsalted

Instructions
 

  • Rinse and pat dry the potatoes, then carefully peel and remove the potato skin.
  • Use a mandolin to cut 1/8″ thick potato slices.
  • Add the cream cheese, butter, and queso to a small sauce pan. Heat over low to medium heat while stirring to combine.
  • Place the baking dish into the bottom of the air fryer basket.
  • Layer the baking dish with a scoop of the cheese mixture, then top with potato slices. Continue with the layers, and finish off the top with the remaining cheese.
  • Air fry the scalloped potatoes in the air fryer at 320 degrees Fahrenheit for 15-18 minutes, or until the tops of the potatoes and cheese is a light golden brown.
  • Allow the dish to cool for a few minutes before serving. Dash a little salt and pepper and fresh parsley for garnish if needed.

Notes

I love to use Russet potatoes for this dish, but Yukon potatoes are also another great ingredient to use.
Store any leftover scalloped potatoes in an airtight container in the refrigerator for up to 3 days. Reheat scalloped potatoes in a small baking dish in the air fryer at 320 degrees Fahrenheit for 3-5 minutes, or until heated through.
