This feta spinach stuffed chicken breast is a quick mashup with fresh chopped spinach, feta, cream cheese, spices, and garlic that creates a fresh spinach mixture dip-like chicken filling that can't be beaten.
In a medium bowl mix together all ingredients except chicken. Cut a pocket into the sides of the chicken breast and stuff the chicken with the spinach and cheese mixture.
Heat the olive oil in a large ovenproof skillet, sear the chicken 5 minutes per side then transfer to the oven and bake for 15 minutes or until the chicken is cooked through.
Notes
Be careful when removing the skillet from the oven, it will be HOT.
