Blackened Chicken Thighs in Garlic Butter Sauce

Ingredients
  

  • 4 tbsp butter
  • 4-6 bone-in skin on chicken thighs
  • 4 tbsp minced garlic
  • 1 1/2 tbsp blackening seasoning
  • 1/2 cup low sodium chicken broth
  • 1 tbsp fresh chopped parsley for garnish

Instructions
 

  • Heat skillet over medium-high heat. 
  • Add 2 tbsp butter to melt. Add chicken thighs and cook for about 3-4 minutes on each side. Remove chicken thighs from skillet. Set aside. 
  • Add 2 tbsp butter and minced garlic to skillet. Brown the garlic, about 2-3 minutes. 
  • Add blackened seasoning and stir for one minute.
  • Add in chicken broth and bring to a boil, reduce the heat. 
  • Add chicken thighs back to the skillet and allow to finish fully cooking, about 6-8 minutes or until internal temperature reaches 165 degrees Fahrenheit. 
  • Serve with al dente spaghetti or fettuccine noodles and drizzle with the butter garlic sauce from the skillet. Then top with shredded parmesan and fresh parsley.
