Use a stand mixer if you have one and cream together the butter and sugar. Add in the egg and vanilla. Stire well.
Stir in the flour, baking soda, and salt. Mix well.
Cover with plastic wrap and chill overnight if possible. If not, chill for at least an hour.
Roll out the dough to 1/4 inch thickness and use cookie cutters to make perfectly shaped sugar cookies.
Bake on 400 degrees Fahrenheit for 7-8 minutes.
Notes
For best results, allow the butter to soften naturally versus using hot butter that has been melted in the micrwave, etc. Cover the dough with plastic wrap and allow to chill overnight if possible. Make the cookies ahead of time and set up a cookie decorating station for New Year's Eve cookie decorating.
