Add the lean ground beef and chopped onion to a medium sized skillet. Brown the beef and onions until fully cooked.
Drain any excess fat from the skillet.
Prepare a 9” deep dish round pie dish with non stick cooking spray.
Add the seasonings to the skillet and combine with the beef mixture.
Pour the beef mixture into the prepared pie dish.
Mix the Monterrey jack and the cheddar cheese together.
Top the beef mixture in the pie dish with 3/4 cup of the cheese.
Preheat the oven to 400 degrees Fahrenheit.
In a medium mixing bowl, whisk together the bisquick mix, milk, and eggs.
Add the remaining cheese to the bisquick mixture.
Pour the bisquick mixture evenly over the beef and cheese mixture.
Bake in the preheated oven for 25-30 minutes or until the center of the pie is set and the top is golden brown. A toothpick should come out clean from the center of the pie.
Remove the pie from the oven and allow it to cook and set fully for 2-3 minutes.
Top with green onions (optional)
