No Bake Chocolate Eclair Cake
This No Bake Chocolate Eclair Cake is a delicious and easy dessert that's perfect for any time of the year. Made with layers of graham crackers, pudding, and more. If you love simple no bake desserts, this is the best and perfect for family gatherings.
Prepare a 9 x 13 baking dish and set it aside.
Make the vanilla pudding and whipped cream and set aside.
Add a layer of whole graham crackers to the bottom of the dish.
In a large bowl, combine the whipped cream and the vanilla pudding.
Spread half of the pudding mixture onto the top of the graham crackers, and continue to alternate the graham crackers and remaining pudding mixture into layers.
Add the final layer of graham crackers to the last vanilla pudding mixture layer.
Cover the top layer of graham crackers with your favorite melted rich chocolate frosting. Cover the dish with plastic wrap and refrigerate for 4 hours, or overnight.
When ready, remove from the refrigerator and slice and serve.
If you want to change the flavors up, consider substituting the regular graham crackers for chocolate graham crackers.
If you don't want to use an instant vanilla pudding mix, consider making your favorite homemade vanilla pudding recipe. You can also substitute instant pudding with chocolate pudding, or make it with a cheesecake flavor.
