Bacon Cheeseburger Tater Tot Casserole

Bacon Cheeseburger Tater Tot Casserole is a HUGE hit and family favorite. Made with ground beef, corn, sour cream, tater tots, cheese, seasonings, and more. It's a hearty dish full of flavor the whole family will love.

Ingredients

  • 1 tbsp olive oil
  • 1 lb ground beef lean
  • 1/2 cup sour cream
  • 15 oz kernel corn drained
  • 10 oz cream of mushroom soup
  • 4 tbsp green onion tops divided in half
  • 2 cups Monterrey Jack cheese shredded, divided in half
  • 1 tsp ground black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/2 tsp white pepper
  • 1/4 cup bacon cooked, chopped into bits
  • 32 oz tater tots frozen
  • salt and pepper to taste

Instructions

  • Heat the oven to 350 degrees Fahrenheit. Prepare the casserole dish with nonstick cooking spray and set it aside.
  • Add olive oil and beef to a large skillet and brown ground beef over medium heat. Remove from heat when cooked and drain excess grease. Set aside.
  • In a medium bowl combine corn, soup, beef, sour cream, seasonings, 1 cup of cheese, and 2 tbsp of the green onion tops. Mix well. 
  • Spread mixture into a prepared 9 x 13 baking dish or casserole dish. Sprinkle a little extra cheese on top. 
  • Cover the beef and cheese mixture with a single layer of tater tots and real bacon bits. Sprinkle with salt and pepper to taste.
  • Bake uncovered in the oven for 50 minutes, or until the frozen tater tots are cooked and golden brown. 
  • Add the remaining cheese and green onion tops to the casserole and place in the oven for an additional 5 minutes or until the cheese is melted. 
  • Serve warm. 

Notes

Store any leftover casserole by covering the casserole dish in plastic wrap or aluminum foil and storing it in the refrigerator for up to three days.
To make this dish ahead of time: Once you have the dish prepared, stop at the step just before placing it into the oven. Instead, cover it with plastic wrap or aluminum foil and place it into the refrigerator. Once you are ready to cook, preheat the oven and then bake the casserole per the recipe card instructions.
