Equipment

  • Air Fryer

Ingredients

  • 2 flour tortillas
  • 2 Tablespoon refried beans
  • 2 Tablespoon shredded Mexican blend cheese

Instructions

  • Prepare the basket of the air fryer with nonstick cooking spray or olive oil if needed.
  • Place tortilla on a flat surface and top tortilla with refried beans on one half.
  • Add a sprinkle of cheese to the top of the refried beans. Add the shredded chicken on top of the cheese, and then top with additional cheese if desired.
  • Fold the tortilla in half. Repeat as necessary for additional quesadillas.
  • Place the folded tortillas into the prepared air fryer basket.
  • Air Fry the quesadillas at 350 degrees Fahrenheit for 8 minutes. Check the tortillas after a couple of minutes and use a spatula to push the top of the quesadilla down if they've started lifting away from the toppings. Flip the tortillas halfway through.
  • Remove the quesadillas from the air fryer and serve with your favorite sides.

Notes

What other ingredients can I add to my air fryer quesadillas?

There are a lot of options when it comes to making a crispy quesadilla in the air fryer. You can add black beans, ground beef, pico de gallo, and more. I love to use leftover shredded chicken as the main ingredient, but you can use whatever you want. My kids love to make air fryer cheese quesadillas with a Mexican cheese blend, and I love to make black bean quesadillas with black beans, pico de gallo, and Monterrey jack cheese.
There are tons of options for quesadillas and the sky is the limit with your choices.

How do I store leftover quesadillas?

Store leftover quesadillas in an airtight container in the refrigerator for up to 3 days. To reheat the quesadillas, add the quesadillas to the air fryer and cook at 350 degrees F for 1-3 minutes or until heated through.
