Add the potatoes to a small bowl of water and then soak the shredded potatoes in cold water for about 30 minutes to remove the starches.
Drain the potatoes and then use a cheesecloth or strong paper towel to squeeze out and remove the remaining excess water.
In a medium sized bowl add the shredded potatoes, egg, flour, green onion, salt, and pepper. Mix well.
Use a cookie scoop (or about 2 Tbsp) of potato mixture and scoop into a single layer onto the prepared air fryer basket. Spray the tops with olive oil.
Air Fry Potato Fritters at 350 degrees Fahrenheit for 10-12 minutes, or until the tops are golden brown.
Allow the fritters to cool for a minute before carefully removing them from the basket of the air fryer and then serve with your favorite dipping sauces.
Notes
Once you shred the potatoes, you can squeeze them or put them between two paper towels and press. Getting out the excess water will help them to fry up nice and crisp in the air fryer.This recipe was made using a 5.8qt Cosori Air Fryer.
