Air Fryer Zucchini Fritters

  • 2 large zucchini shredded
  • 1 Tablespoon salt
  • 1 large egg
  • 3 Tablespoons All purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon ground black pepper


  • Take a grater and shred 2 medium sized zucchini. 
  • Add salt to the shredded zucchini and mix. Let sit for 10 minutes and then drain out all the water out of the zucchini with a strong paper towel or clean dish towel.
  • Preheat the air fryer to 360 degrees Fahrenheit. Prepare the air fryer basket with nonstick spray if needed. 
  • Whisk together the egg. 
  • In a medium sized bowl, add the egg, flour, and spices to the shredded zucchini. Mix well. 
  • Scoop 2 tbsp of the zucchini mixture and place into the bottom of the prepared air fryer basket. You should be able to make 5 fritters, leaving room in between each one. 
  • Air fry the zucchini fritters for about 12 minutes. 
  • Let cool for a few minutes and then serve with your favorite dipping sauce. 


This recipe was made in a basket style 5.8 qt Cosori Air Fryer. If you are using a different brand of air fryer, you may need to adjust the cooking time accordingly.
