Cover the chicken with olive oil and Italian seasoning. Place in an oven-safe dish and bake for 25 minutes.
With 10 minutes of bake time remaining, add the balsamic vinegar to a skillet over medium-high heat. Stirring well as it starts to heat. Bring to a boil, then reduce to a simmer for a few minutes before removing from heat.
When the chicken is finished baking, remove it from the oven. Top with fresh mozzarella, tomato, and lightly season with salt.
Bake for an additional 3 minutes. Remove and top with fresh basil and pour balsamic reduction over the top.
Serve immediately.
