Caprese Chicken

Caprese Chicken is made with seasoned grilled chicken, sliced tomatoes, mozzarella, and fresh basil dredged in a balsamic reduction sauce.

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 6 oz mozzarella cheese
  • 1 tomato
  • 4 basil leaves
  • 2 tbsp italian seasoning
  • 3/4 cup balsamic vinegar
  • olive oil
  • pinch of salt

Instructions
 

  • Preheat oven to 400 degrees Fahrenheit.
  • Cover the chicken with olive oil and Italian seasoning. Place in an oven-safe dish and bake for 25 minutes.
  • With 10 minutes of bake time remaining, add the balsamic vinegar to a skillet over medium-high heat. Stirring well as it starts to heat. Bring to a boil, then reduce to a simmer for a few minutes before removing from heat.
  • When the chicken is finished baking, remove it from the oven. Top with fresh mozzarella, tomato, and lightly season with salt.
  • Bake for an additional 3 minutes. Remove and top with fresh basil and pour balsamic reduction over the top.
  • Serve immediately.

Notes

  1. Serve with sides such as roasted asparagus, roasted zucchini, and herb rolls. 
  2. Don't overheat the balsamic vinegar. Bring it to a boil, stir, and then simmer for a few minutes before removing from heat. 
  3. Consider roasting pine nuts and topping the chicken with roasted pine nuts as well! It will give it even more flavor and a little crunch.
