Whisk together 1/3 cup of sugar, flour, salt and milk. Place over medium heat. Constantly stir until it reaches a simmer. Continue to cook for 1 minute.
Remove from heat and whisk in your gelatin. Add your vanilla and almond extract. Place in your ice bath and stir every so often until it's room temp.
Add your 1/2 cup of cream to a bowl and beat until stiff peaks form. Place in the fridge.
Add your egg whites and cream of tartar to a bowl. Beat until soft peaks form. Add the remaining sugar and beat until stiff peaks form.
Add your cooled custard to a large bowl. Beat until smooth. Fold in your cream, egg whites and coconut. Be careful not to over mix your pie filling.
Add your pie filling to your graham cracker crust. Spread to the edges. Whip your 2 cups of cream. Place on top of your pie. Place in the fridge for at least 1 hour. Can take longer depending on how cold your fridge is.
