Ingredients
  

  • 1.5 lbs smoked kielbasa cut into 1-inch slices
  • 2 lbs baby potatoes washed (cut in half if very large)
  • 1 large yellow onion roughly chopped
  • 1/3 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1/4 cup water

Instructions
 

  • Wash the potatoes and leave them whole (or cut in half if very large). Cut the kielbasa into thick slices.
  • Place the potatoes and sliced kielbasa in the bottom of a large slow cooker. Sprinkle the chopped onions on top.
  • In a small bowl, whisk together the brown sugar, apple cider vinegar, Dijon mustard, and water until combined.
  • Pour the sweet and sour sauce over the ingredients in the slow cooker.
  • Cover and cook on low for 6-7 hours (or on high for 3-4 hours) until the potatoes are tender.
  • Toss to coat everything in the sauce and serve warm.
