Ingredients
  

  • 8 Ounces pasta such as Rigatoni
  • 2 Tablespoon olive oil
  • 1 shallot small, chopped
  • 2 Cloves garlic finely minced
  • ¼ Cup tomato paste
  • 1 Tablespoon vodka optional
  • ½ Cup heavy cream
  • 1 Teaspoon chili flakes
  • ¼ Cup Parmesan cheese freshly grated
  • 1 Tablespoon butter
  • ½ Teaspoon salt
  • 2 Tablespoon parsley for garnish

Instructions
 

  • Cook pasta in a pot of salted boiling water.
  • Meanwhile, heat olive oil in a medium saucepan and over a medium heat. Add shallot and saute for 4 minutes until it softens. Add garlic and cook for one more minute.
  • Stir in tomato paste and cook it for 1 minute.
  • Pour in the vodka, heavy cream, chili flakes, and salt, and cook for three more minutes until the vodka sauce is smooth.
  • Add Parmesan and butter and stir until Parmesan melts.
  • Once pasta is ready, drain it in a colander, reserving ½ cup of pasta cooking water.
  • Add pasta to a pot with spicy vodka sauce and toss to combine. Add ¼ cup of pasta cooking water to thin out the sauce and achieve a perfectly creamy pasta.
  • If necessary, add more pasta cooking water.
  • Adjust salt and pepper, sprinkle Gigi Pasta with chopped parsley, and serve immediately.
