3 medium ripe bananas divided 1/2 cup butter melted 1 cup granulated sugar 2 eggs 2 teaspoons vanilla 1/2 cup sour cream 1 teaspoon baking soda 1 teaspoon salt 1 1/2 cups all purpose flour 1/2 cup mini chocolate chips 1/2 cup chopped walnuts
Preheat oven to 350.
Spray 9 x 5 dish with non stick cooking spray
Mash 2 bananas in a bowl, and thinly slice the third, leaving it to the side.
Stir together the butter and sugar in a large bowl.
Mix in the eggs and vanilla and stir until smooth.
Add the sour cream, mashed bananas, baking soda and salt, and stir until blended.
Mix in the flour until blended well.
Fold in chocolate chips, walnuts, and sliced banana
Pour into a pan (or make mini loaves and reduce the baking time accordingly)
Bake for 50-60 minutes or until toothpick comes out clean.
Let sit for 15 minutes, remove from pan, and then cool on a wire rack.
