Easy Bread Pudding Recipe
Recipe for Bread Pudding
Toast waffles according to the package. When cool, cut into 1 inch pieces.
Arrange waffle pieces evenly in an 8 x 8 baking dish that has been coated with cooking spray.
In a large bowl, whisk together all ingredients, (minus strawberries, chocolate, olive oil, and powdered sugar). Pour over waffles, pressing it in to make the waffle pieces moist. Let the mixture soak while the oven preheats to 325 degrees.
Place baking dish on a sheet pan, and bake for 30 to 40 minutes, or until the pudding is set and golden brown.
Before serving, sprinkle with powdered sugar. Take your white chocolate chips and place 1/2 cup in a microwave safe bowl. Add a tsp of olive oil and heat for 30 seconds. Stir. Heat for an additional 30 seconds, and continue until your chocolate is melted. Glaze the top of your bread pudding with the melted white chocolate, take some of the mashed strawberries and finish topping your bread pudding.
