2 10oz olives Spanish Queen Olives 1 pint grape tomatoes sliced in half 1/4 cup olive oil extra virgin 2 tbsp lemon juice fresh 2 cloves garlic minced 1 small purple onion sliced thin 1/4 tsp black pepper 1 tbsp parmesan cheese shredded
Combine tomatoes, olives, lemon juice, pepper, garlic, and onions in a medium sized airtight container.
Allow marinating in the refrigerator overnight if this is an option.
Top with shredded parmesan cheese before serving.
Allow the salad to marinate overnight or for at least 8 hours if possible.

Best served chilled.
