Quick and Easy Tomato Salad Recipe

Have you ever signed up for a potluck lunch or dinner that was last minute and you weren’t sure where to start? This quick and easy salad recipe is perfect for those occasions when you have very little time but want to make a big impression.

What’s so great about this quick and easy salad? It’s not time-consuming, and the flavors are amazing. Your guests will love the mouthwatering flavors.

What Ingredients Do You Need for a Tomato Salad?

This tangy and flavor-filled salad will have your taste buds roaring for more! There is just a hand full of ingredients, and they are all easily found at your local grocer.

To get started, you will need to have a few items on hand:

  • Spanish Queen Olives
  • grape tomatoes (sliced in half)
  • extra virgin olive oil
  • fresh lemon juice
  • cloves of garlic, minced
  • purple onion, sliced thin
  • cracked black pepper
  • parmesan cheese (shredded for serving)

How to Make a Tomato Salad Recipe

In a medium-sized mixing bowl, combine tomatoes, olives, lemon juice, pepper, garlic, and onions in an airtight container. Place in the refrigerator and allow to marinate overnight, or for at least 8 hours if possible.

Ingredients

  • 2 10oz olives Spanish Queen Olives
  • 1 pint grape tomatoes sliced in half
  • 1/4 cup olive oil extra virgin
  • 2 tbsp lemon juice fresh
  • 2 cloves garlic minced
  • 1 small purple onion sliced thin
  • 1/4 tsp black pepper
  • 1 tbsp parmesan cheese shredded

Instructions

  • Combine tomatoes, olives, lemon juice, pepper, garlic, and onions in a medium sized airtight container. 
  • Allow marinating in the refrigerator overnight if this is an option. 
  • Top with shredded parmesan cheese before serving. 

Notes

Allow the salad to marinate overnight or for at least 8 hours if possible. 
Top with shredded parmesan cheese just before serving. 
Best served chilled.

    I am assuming that the olive oil goes in with the rest of the ingredients to marinate, right? It is listed in the list of ingredients but not mentioned in directions as how to make this yummy looking salad.
