These 3 ingredient cake mix cookies are one of the easiest dessert recipes. They are light and fluffy cookies that can be made in so many ways!

Ingredients
  

  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 cake mix

Instructions
 

  • Heat the oven to 375 degrees Fahrenheit. 
  • In a large bowl combine a box of cake mix, eggs, and vegetable oil. 
  • Use a hand mixer to mix until a thick dough forms. 
  • Prepare a cookie sheet with parchment paper or with non-stick cooking spray. Use a tablespoon to drop the cookie dough. 
  • Bake in the oven for 10 minutes. Remove and allow to slightly cool before serving. 

Notes

  1. If the dough is sticky, consider placing it in the refrigerator for 30 minutes prior to baking. 
  2. Store cookies in an airtight container. 
  3. Freeze cake mix cookies for up to 3 months. Freeze them on the cookie sheet, and then stack them in an airtight container with each cookie separated by parchment paper. 
  4. Consider different cake mixes and adding different mix-ins to change the recipe.
