Air fryer chicken taquitos turn out golden brown and crispy every single time. Made with Rotisserie chicken, corn tortillas, cream cheese, shredded cheese, and more. It's a weeknight favorite and a total winner for dinner.
Add the shredded chicken, cream cheese, and taco seasoning to a large bowl and combine.
Warm the tortillas in a skillet for a few seconds over medium heat.
Add two tablespoons of the chicken and cheese mixture to the center of the corn tortilla.
Roll the tortillas and then place them in a single layer in the basket of the air fryer. Spray the taquitos with olive oil spray.
Air fry the chicken taquitos at 400 degrees Fahrenheit for 5 minutes. Turn the taquitos, spray with olive oil, and cook for an additional 2-3 minutes, or until the tortillas are a light golden brown.
Carefully remove the chicken taquitos from the air fryer and serve with your favorite toppings.

You can substitute the chicken for steak, ground beef, or make veggie taquitos with bell peppers, onions, and sweet potato bites.You don’t have to use Rotisserie chicken. Use other types of chicken such as chicken breast, or chicken thighs for this recipe. It’s a perfect recipe to make when looking for something to use leftover chicken.Store any remaining chicken taquitos in an airtight container in the refrigerator for up to 2 days. Any longer and the bottom of the tortilla shell may get too soggy for reheating. To reheat, place back into the air fryer and reheat at 350 degrees Fahrenheit for 2-3 minutes of cook time.
