Instant Pot Rice and Beans

Ingredients
  

  • 2-3 tbsp olive oil
  • 1 large onion, diced
  • 4-5 cloves garlic, diced and minced
  • Smoked sausage, cut into pieces
  • 3 ¼ cups chicken broth
  • 3 cups long-grain rice
  • 1 can small black beans, rinsed and drained
  • 1 tbsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • Green onion

Instructions
 

  • Pour olive oil into the inner pot of Instant Pot. Set on sauté function.
  • Add onion, garlic, and sausages and cook on sauté for 5-7 minutes.
  • Turn off sauté function and add chicken broth. Using a wooden spoon, scrape off any
    brown bits at the bottom of the inner pot.
  • Rinse, wash and drain the rice. Add into the inner pot. Stir so that all rice grains are fully immersed.
  • Add beans followed by cayenne pepper, paprika and cumin.
  • Attach lid and set IP to rice setting or, 12 minutes low pressure.
  • Once time is up, allow for a QPR.
  • Serve in individual bowls and garnish with green onion. Enjoy!
