This is a great dish for the colder months and makes a delicious hearty meal that keeps well as leftovers, too.

Easy Rice and Beans
This recipe calls for great tasting ingredients and can be made in under 30 minutes.
- 2-3 tbsp olive oil
- 1 large onion, diced
- 4-5 cloves garlic, diced and minced
- Smoked sausage, cut into pieces
- 3 ¼ cups chicken broth
- 3 cups long-grain rice
- 1 can small black beans, rinsed and drained
- 1 tbsp cayenne pepper
- 1 tsp paprika
- 1 tsp cumin
- Green onion
Start by pouring the olive oil into the inner pot of Instant Pot and set on the sauté function.
Add the onion, garlic, and sausages and cook on sauté for 5-7 minutes.

Next, turn off the sauté function and add your chicken broth. Using a wooden spoon, scrape off any brown bits at the bottom of the inner pot. This is a great way to add to the flavor.
Rinse, wash and drain the rice and add it into the inner pot. Stir it up so that all the rice grains are fully immersed.

Add your beans followed by cayenne pepper, paprika, and cumin.
Attach the lid and set your IP to rice setting or, 12 minutes on low pressure.

Once the time is up, allow for a Quick Pressure Release.

Serve this hearty meal in individual bowls and garnish with green onion if you desire. Enjoy!
