Fajita Grilled Chicken Lunch Bowl
To make this fajita grilled chicken lunch bowl you will need to have a few ingredients on hand:
- grilled and season chicken fajita meat
- spinach leaves
- cooked quinoa
- cherry tomatoes
- sautéed yellow and orange bell peppers
- avocado and green onion tops
- cilantro to garnish
This salad is seriously so good by itself, I don’t actually eat it with any sort of dressing. However, you can always add your favorite low fat healthy dressing. It’s so full of flavor, I personally don’t need anything else.
To make this salad, I just add a layer of spinach leaves, then quinoa, fajita chicken meat, tomatoes, bell peppers, avocado, and then top with the cilantro and green onion tops. It’s such a delicious salad.
