Summer is one of my favorite times of the year, and grilling makes everything better. We love to grill our vegetables in the Summer, and this year we have grilled more then ever. One of our new favorite things to make is this awesome grilled zucchini recipe that I am sharing with you today. It’s seriously one of the most amazing things I have ever put in my mouth! I cannot tell you how good it is and really make you understand, so you are just going to have to TRUST me and make this your self. You will thank me later. PROMISE. So are you ready to get started with this amazing zucchini on the grill? Let’s do it…
Have you ever had something that you were expecting to taste great, but it turned out tasting AMAZING? Way more than you EVER expected? This is one of those recipes for me. It is seriously one of those things I want to eat at least one time per week. However, you have to have the right ingredients to make it amazing, and I am going to share those tips with you today.
Grilled Zucchini Recipe
The most important thing about this recipe is the base layer of flavor. I use a basil flavored olive oil to coat the zucchini with. You are probably thinking, “That’s easy! I have that at home.” Actually, if you purchased our olive oil from a regular grocery store it has probably been bottles and shelved for more than three months, and if that’s the case, the flavor will be all wrong. You need to hunt around for a local store that makes and sells their own flavored olive oils. You want fresh olive oil that is bursing with flavor.
I am sure you can use the regular store bought kind, but if you really want this to be amazing, go out and find some fresh olive oil. (Olive oil rant is now over.)
OK. Heat your grill up to 350 degrees. (Gas or charcoal. We have a Big Green Egg Grill so we use lump charcoal because it burns more evenly than regular charcoal. Makes it easier to keep the temperature from fluctuating too much while cooking) <—TIP.
What you will need for this Grilled Zucchini Recipe:
- Zucchini (Sliced Fat and Thin – see pics)
- FRESH olive oil (I use a basil flavored blend)
- Tony Chachere’s® Original Creole Seasoning
- Sea Salt
Once you have your Zucchini sliced fat and thin (like me cooking terms?), you will then baste it with a layer of olive oil on both sides. Make sure you coat each side really well.
After you have the zucchini coated, sprinkle a little Tony Chachere’s® and sea salt onto both sides of the zucchini.
When you are ready, lay the seasoned zucchini directly onto the grates of the grill. (If you are worried things will fall through smaller grates, add a piece of foil with holes poked in it.) <—ANOTHER TIP.
You will grill the zucchini on 350 for about 20 minutes total, making sure to flip every few minutes to ensure even grilling. You are going to REALLY love this Zucchini.
After you are finished, just remove from the grill and start snacking, or cover with foil and keep warm until the rest of dinner is finished. It’s good all alone or served with grilled pork chops and grilled sweet potato slices. (Another favorite from the grill).
