Shredded Roast Beef Stuffed Sweet Potatoes (Whole 30 & PALEO)

What can I say about these shredded roast beef stuffed sweet potatoes….other than they are COMPLETELY and UTTERLY amazing? Well as it turns out I can actually say A LOT, which is why I have an entire blog post about them.

Made with slow cooked (all day!) shredded roast beef and placed on a delicious sweet potato, you won’t be able to ask for a healthier lunch or dinner option. They are also completely Whole 30, PALEO, and oh-so good.

In fact, this recipe is SO EASY you will wonder why you didn’t make it before!

Sweet Potatoes Recipe

Here is what I LOVE LOVE LOVE about this recipe. Not only is it healthy, but it is also super easy to make. You can make this recipe the night before and have a delicious lunch ready to go in the morning, or you can make this in the slow cooker all day and have a delicious dinner when you get home.

Shredded Roast Beef Stuffed Sweet Potatoes

Here is what you will need to make these palate pleasers:

  • 4-6 sweet potatoes
  • 2lb roast
  • beef broth
  • salt/pepper and favorite healthy seasonings to taste

How do I make Shredded Roast Beef in the crock pot?

Turn the crock pot on low. Place the roast into the slow cooker covered in your favorite seasonings and then cover with beef broth. Cook on low all day (8 hours) or on high for 4 hours.

Once fully cooked, turn the slow cooker on warm and then start shredding the roast.

Fully cook the sweet potatoes. Slice open the sweet potatoes and then mash the insides, leaving everything in the skin of the sweet potato.

Scoop and lightly drain the shredded roast and place on top of the sweet potato. So good!

  • Place the roast in Crock Pot, cover with beef broth,  and cook on low for 8 hours. 
  • Fully cook the sweet potatoes when ready. 
  • When roast is finished, shred and serve over the sweet potatoes.
