Avocado Egg Toast

One of the hardest things for me to do is grab a healthy breakfast and go. At one time I was notorious for just skipping breakfast altogether and waiting for lunch. Sound familiar? When I realized that skipping the best meal of the day was completely crazy, I started researching what those good healthy options were. When those mornings allow me time, I grab one of my favorite healthy eats, this Avocado Egg Toast. Pair it with and 8oz. glass of milk or a small container of yogurt and you should be close to hitting your protein goal for the morning.

This quick breakfast only takes a few minutes time, and it is one of my favorite healthy breakfast recipes. Here is what you need to get your day started off right:

  • 1-2 boiled eggs, sliced
  • 1/2 cup sliced avocado
  • 1 tsp extra virgin olive oil
  • salt and pepper to taste

Avocado Egg Toast

This is a real favorite of mine and is super simple to make. You can boil the eggs the night before and it will only take minutes. I like to boil extra eggs because I will sometimes grab them for quick mid day protein snacks.

While toasting your whole wheat bread, slice your avocado. Take the toast and cover with a little olive oil for flavor, top with sliced avocado, sliced egg, and add a little salt and pepper to taste. Seriously simple, and seriously good!

Sometimes my morning are so busy I don’t even have time to make breakfast, and that’s when I will grab one of my favorite protein drinks and head out of the door. (<—procrastinator and poor planner) However, when I have extra time, I make this quick meal and LOVE it.
