Staying fit and healthy is a super high priority for me. (In fact, you can join our secret Facebook group where we share all things fit and healthy and motivate each other….because it’s easier when you have a tribe of people just like YOU!) What you ingest is about 80% of what can make you or break you in your quest to be fit. I LOVE a delicious and healthy dinner. It’s not often that I do a double take when I am creating a delicious recipe, but this one made my whole family do a double take. It was THAT good. If you love a good chicken dinner, and want something that is actually quickly prepared and baked, then this is a recipe you will love. If you are a fan of caprese salads, you are going to LOVE this Basil Infused Balsamic Oven Baked Chicken. It’s another winner/winner chicken dinner you are going to devour.
In sharing my favorite fit recipes, I thought I would share with you one of my favorites. I mean, I love a delicious chicken dinner. It’s healthy, hearty, full of protein, and always filling. It is so easy to get caught up into making the same 5 or 10 chicken recipes, but this is a recipe you can easily make over and over again.
Here is what you will need for this dish:
- organic chicken breast (because it’s healthy!)
- tomato
- mozzarella cheese
- 3 (Tbsp) basil olive oil
- 3 (Tbsp) balsamic vinegar
Heat oven to 325.
I love the fresh olive oils and vinegars you can find at Bella Nonna’s. If you have one of these stores near you, do yourself a favor and walk inside. If you love to cook and you love fresh olive oils and vinegars, you are going to die and go to heaven. It’s a TASTING place. You won’t believe how many different selections they have or just how amazingly delicious they are. Trust me. Awesomeness awaits.
Back to our recipe….take a fork and poke a few holes into the chicken breast. Pour about 3 tbsp of basil olive oil over the chicken. Flip and turn to make sure it is fully covered.
Basil Infused Balsamic Oven Baked Chicken
Pour about 3 tbsp of the balsamic vinegar over the chicken and flip and turn to make sure it is fully covered.
Slice the tomato and cover all of the chicken breasts.
Place into the oven and bake for 40 minutes. Cover with mozzarella cheese and place back into the oven for 10 additional minutes. Use a thermometer make sure the internal temp is 160 for the chicken to be fully cooked. If not, allow to cook for a few additional minutes until the desired temp is reached.
Allow to cool slightly and serve with your favorite salad.
