These beach cookies are just really cute to add to the fun summer days. They have a nice crisp to them with a delicious softness in the middle. The sliced almonds also add in some protein and give a nice flavor as well!

How to Make Sand Dollar Cookies
The ingredients you will need to make these Beach Cookies are in this list below. However, I have the full recipe with direction to print out towards the bottom of the page.
- unsalted butter
- powdered sugar
- eggs
- vanilla extract
- all-purpose flour
- baking powder
- cinnamon sugar, this gets sprinkled on top
- sliced almonds
Let’s get baking…
Simple Sand Dollar Cookies
This recipe only calls for a handful of ingredients and if you a lined baking sheet, you won’t have to worry about your cookies sticking or a big clean up.
Start by preheating the oven to 350° F.
In a large bowl, cream together butter and powdered sugar; mix until very creamy.
Add the 2 whole eggs and 2 yolks only. Make certain to reserve the whites for later
from the egg separation above.
Beat until well combined. Add vanilla and salt, and blend well.
Next, add in the flour and baking powder and stir until the dough is very soft.
Form a ball with the dough, wrap in plastic wrap and refrigerate for at least two hours.
Line a baking sheet with parchment paper.
Roll out dough to 1/4″ thick on a floured surface and cut out 2 5/8” circles and brush the circles with the reserved egg whites.
Cinnamon Sugar Summer Cookies
Sprinkle each circle lightly with cinnamon sugar and press 5 almond slices into the center of each circle to make a sand dollar.
Put in the oven and bake at 350° F for 3 minutes.
After 3 minutes, remove the baking sheet from the oven and press the almonds in again, making slight indentations in the circle.
Add more cinnamon at this point too, if need be, to adjust the overall coloring of the final cookie.
Place the baking sheet back in the oven and bake until the edges are
golden brown, which is about another 10 minutes.
Remove the cookies from the oven and let them rest on a baking sheet for 3 minutes.
To finish up transfer them to a cooling rack to cool completely.
When your cookies are cooled serve them up on a plate for everyone to enjoy.
