This vegetarian Winter salad is delicious and bright. It’s definitely one you’ll want to share again and again. This bright flavorful Winter salad recipe will save you from all the cold dreary weather outside with seasonal citrus fruits, hearty greens, and buttery avocados. Plus, it’s light enough to go with dinner and hearty enough to make a filling lunch lal by itself.

Here’s what you’ll need to make your own:

Ingredients:

  • 6 handfuls of washed mixed spring greens
  • Cucumber
  • 1 blood orange or Cara Cara orange
  • 2 clementines
  • ½ cup of almonds, whole or sliced
  • ½ to ⅔ cup of fresh pomegranate arils
  • 1 medium ripe avocado
  • Olive oil

Instructions:

Start by washing and drying all of your ingredients. And If you’re using a whole pomegranate, open it and remove about ½ cup of the rails.

Ingredients
