What’s better than a quick and clean eating salad for lunch? Well how about an amazingly delicious garlic lemon pepper shrimp salad! Made with snap peas, asparagus, garlic, mixed greens and more,  it’s a super antioxidant protein packed green salad. Not only that, but it’s so good that you are going to want to make this dish on a regular basis. Check out how easy it is to eat “clean”.

Garlic Lemon Pepper Shrimp Salad - the perfect clean eating lunch recipe.

Have you been trying out new, healthy recipes? Are you looking for a delicious clean eating salad recipe? This Garlic Lemon Pepper Shrimp Salad is going to be one of your new favorites. It’s easy to make, and you can easily make and take this for a work lunch.

Garlic Lemon Pepper Shrimp Salad

Here is what you will need to have on hand:

8 Large Shrimp, raw- peeled and devained
2 garlic cloves, minced
1 lemon, halved
3 stalks Asparagus, cut in 1/3s
1/2 cup Snap Pea Pods
1 green onion, cut into 2 ” pieces
Mixed greens
Sea Salt & Pepper
Olive Oil

Garlic Lemon pepper shrimp salad ingredients

Heat a skillet over medium high heat, drizzle with Olive oil.
Add shrimp, garlic, asparagus, pea pods, green onions and a pinch of salt & pepper.
Saute for 5-6 minutes or until pink and cooked through.

Squeeze the juice from half a lemon, add a pinch of pepper and mix well.

Remove from heat.

Add mixed greens to a bowl, drizzle with Olive oil and juice from the other half of the lemon.
Sprinkle with a pinch of salt & pepper. Toss.

Top with shrimp and lemon wedges.
