Twice Baked Potatoes are the perfect side dish or main dish and delicious comfort food. Made with russet potatoes, milk, egg, cheese, green onion, seasonings, and more. It’s an easy family favorite potato recipe that never gets old.
I love baked potatoes and stuffed potatoes are one of my favorite potatoes recipe. There is something so comforting about a hot potato with my favorite toppings.
Personally, I don’t think you can have too much cheese on anything but especially potatoes. The downside of baked potatoes is that I feel like once I dig in the toppings have all been eaten and you are left with plain potato. That’s why I love making Twice Baked Potatoes because there’s flavor in every bite. The skin is crispy and delicious as well so you can eat the entire thing.

Twice Baked Potatoes are a perfect addition to any meal but are also great by themselves. When my husband grills steaks I will put these together and the family enjoys a great dinner. Once it’s time for grilling weather again it is one of our favorite things to do. For a family event or the football game, we grill and I make these potatoes that go with just about anything.
Stuffed Potatoes
The best part is these stuffed potatoes can be a meal by themselves. Just add a green salad and you will be completely satisfied. Perfect for any night of the week.
I like that I can make these ahead of time and put them in the refrigerator to cook later. Just put it all together, wrap well, and put it in the fridge. When you are ready to cook them just let them sit out for about 30 minutes and cook. It’s great for family holidays when you have so much to prepare.
If by some weird reason you have leftover Twice Baked Potatoes, they are reheatable. Just remove any toppings like sour cream or bacon and you can reheat in the oven at 350 degrees for 20-25 minutes. Just watch for them to get bubbly and golden brown.
Be sure to wrap your potatoes well or place them in an airtight container and keep them in the refrigerator until you are ready to reheat.
Ingredients Needed:
- Large Russet Potatoes
- Green onions with tops (chopped)
- Crispy cooked bacon
- Salted Butter
- One egg
- Milk
- Garlic Powder
- Ground black pepper
- Shredded sharp cheddar cheese
- olive oil
How to Make Twice Baked Potatoes
- Clean and dry the potatoes. Poke holes with a fork and then cover the potatoes with olive oil and a little kosher salt.
- Microwave the potatoes until they are about half done. Then bake them in the oven on 400 degrees for 15 minutes so will achieve a dry and crispy skin.
- Cool the potatoes until they can be easily handled.
- Slice potatoes at 1/2″ of the top lengthwise.
- Grab a large bowl and gently scoop out the potato flesh with a spoon, leaving a small amount of potato and leave the potato skins intact.
- In a large mixing bowl, mash the potatoes with a potato masher. The potatoes will need to be warm so put them in the microwave for a minute or two if they have cooled too much. Microwave just until warm, not super hot.
- Add room temperature butter, milk, and egg and mash until just blended. Add the remaining ingredients except for the cheese, reserving some of the toppings for decoration.
- Stuff the potato shells with the mashed potato mixture, mounting it high above the top of the potato. Place the potatoes on a baking sheet and add cheese, bacon bits, and remaining toppings to the top of each potato.
- Bake potatoes for a second time at 350 degrees until heated through (about 20 minutes).
