I have so many favorite recipes to share, but today I am going to narrow it down to one of the most flavorful easy instant pot recipes I have. Oh how I love new kitchen innovations. Not that the pressure cooker is a “new” device, but with it’s popularity increasing over the last 18 months, I can’t stop using it. You can find recipes galore everywhere you search, from Google to Pinterest. Instant Pot (or pressure cooker) recipes are literally everywhere. The trick is finding the good ones!

I must admit that when I first purchased my Instant Pot I was a little nervous. I was so nervous in fact, I placed it strategically on a cabinet in my kitchen so that in case an explosion happened, it would take out my top cabinet and not hit my ceiling. Ha! Well, the good news is that everything worked out and my cabinet and ceiling are all still in one piece.
When I first started looking for easy instant pot recipes, I immediately started searching for chicken tacos. It’s one of my favorite things to make, and I have an awesome recipe that I already use with my crockpot. I changed the recipe up just a little and turned it into an Instant Pot Chicken Tacos recipe. It’s now even EASIER than before.
Is the Instant Pot easy to use?
Heck yes! That’s one of the reasons you will find me sharing new Instant Pot recipes. Have you seen my Instant Pot Hawaiian Chicken? It’s so good! I am all about sharing time savers for the kitchen. The Instant Pot is really easy to use and the food is always amazing. In fact, once your meal is cooked, the Instant Pot will automatically switch over to keep it warm until you are ready to serve it. How does it get any easier?
Instant Pot Chicken is the best
I am also thoroughly convinced that the Instant Pot makes the BEST chicken, with maybe one exception for my husband’s grilled chicken. You certainly can’t make chicken like this inside of 20 minutes anywhere else. Not only that, but it’s really easy to set it and forget it. I set my Instant Pot Chicken Tacos to cook and then go do bath time or homework with the kiddos. It’s like this awesome extra set of hands helping you!
Instant Pot Chicken Tacos
Once the chicken is finished cooking, shred it and serve it up! You can serve it over a bed of lettuce and top it with sliced avocado, sour cream, chives, and a little salsa to make an amazing Chicken Taco Salad. Or, use regular taco shells or soft taco shells and make some out-of-this-world chicken tacos.

Instant Pot Chicken Tacos Recipe
Ingredients
- 3- 4 medium chicken breasts
- 1/2 teaspoon black pepper
- 1 small purple onion chopped
- 2 Tablespoons taco seasoning
- 1 14-ounce can salsa
- 1/4 cup freshly squeezed lime juice from about 1 medium lime
Instructions
- Season both sides of the chicken with pepper and taco seasoning.
- Place chicken into the bottom of the Instant Pot®.
- Top chicken with onion and salsa.
- Secure Instant Pot® lid into the lock position.
- Place the lid onto the Instant Pot® and turn on the Poultry setting. Set for 12 minutes.
- Once finished, allow the Instant Pot® to naturally release pressure for 20 minutes.
- Remove chicken from the Instant Pot® and shred. Sprinkle with lime juice.
- Serve over rice or with tortillas for some amazingly easy and delicious tacos.

Question, I see that the recipe doesn’t include water. Is that on purpose or an accident? If it doesn’t need water can you help me understand why so I can apply that knowledge to other recipes also I really want to try this.

That’s a great question, and I can elaborate more here. I will also edit the post in case someone else has that same question. I use a liquid salsa, nothing that is very chunky. Because I am using that 14oz jar of salsa, and because of the cook time (which increases the amount of water coming from the chicken) you do not need to add water. I have never added water to this recipe. I think that would take away the flavors. Try and let me know what you think! 🙂
