One of my favorite healthy eats is grilled chicken, and this delicious grilled chicken with avocado salsa is a favorite of ours. It’s not only healthy, but it is literally bursting with amazing flavors. If you want to step your grilling game up a notch, jot this recipe down and get ready for some amazing flavor explosions.
One of the biggest advantages I think we have with our grilling is the fact that we own a Big Green Egg grill. I can honestly say that the difference in taste and texture in the food has been so noticeable, we won’t ever go back. In fact, if we go camping, we will even bring a small transportable Big Green Egg with us. If you have never experience food on a Big Green Egg, make sure you add that to your to-do list. (This is not sponsored, I am just letting you in on a little fun fact.)
Grilled Chicken with Avocado Salsa Ingredients
Back to this Grilled Chicken with Avocado Salsa recipe…it is downright amazing. Here is everything you will need on hand to get started:
- 4 boneless skinless chicken breasts (I prefer organic chicken)
- poultry seasoning (ingredients for the seasoning below)
- cilantro flakes
- 2 medium avocados
- 1/4 red onion diced
- 1 tomato (diced)
- olive oil
- juice of a large lime
- salt/pepper to taste
- PAM Olive oil cooking spray (a secret weapon/ingredient!)
To make the poultry seasoning you will need:
- 1 1/2 tsp salt
- 1/2 tsp paprika
- 1/4 tsp cayenne
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp black ground pepper
- 1/4 tsp dried thyme
- 1/4 tsp dried oregano
- 1/4 tsp rubbed sage
- dash cumin
The secret to the perfect grilled chicken breast
To get started, rinse and dry the chicken and place on a prepped cookie sheet. Spray the chicken on both sides with the PAM Olive oil cooking spray. (This is the secret to eating the most delicious and MOIST chicken breast you have ever tasted. It keeps the flavors sealed inside!)
Take the seasoning mix and cover both sides with a light coating of the poultry seasoning. Place on the grill and make sure you don’t overcook the chicken. We cook our chicken on the Big Green Egg at 350 degrees for about 10-12 minutes per side. We then pull them and place on a sheet, cover with foil, and allow them to rest for about 10 minutes before serving. (This continues to cook them and allows the flavors to become more vibrant.)
Grilled Chicken with Avocado Salsa Recipe
To make the avocado salsa, slice and dice the avocados and place into a small bowl. Cover with a tablespoon of olive oil, juice of lime, and sprinkle to taste salt and pepper. Add the purple onion and tomatoes and then mix well.
Once the chicken has rested fully, serve with a topping of avocado salsa and sprinkle with a bit of cilantro.
