Hello PinkWhen readers! Justine from Cooking and Beer here. Can you believe it’s April already? I definitely can not believe it’s April. I feel like Christmas was just yesterday, and this might be because I still have yet to take down all of my Christmas decorations. Yes, I’m THAT person. Anyway, I’m obsessed with all things spring lately. The weather here in Colorado has been absolutely GORGEOUS, and asparagus, peas and strawberries are bombarding the produce shelves of our local market. I knew I had to highlight strawberries in a crepe recipe, so these strawberry cheesecake chocolate crepes were the first thing to come to mind!
Do you guys do brunch often? My better half and I do brunch ALL the time, but we very rarely go out for brunch. I like the kind of brunch where I can put my creative juices to the test, all while lounging around in my PJs, and make an entire indulgent spread to welcome in the weekend. Frittatas are almost always on the menu. Throw in some bacon, scones, and fresh fruit; and we are stuffed until dinnertime. My latest obsession are crepes though, but I’ll get into that in a minute. 😉
Strawberry Cheesecake Chocolate Crepes
I want to talk about this strawberry cheesecake filling for just a second. Strawberries are INCREDIBLE right now. They literally taste like spring, and are so juicy, sweet and plump. I honestly don’t think there is a combination of flavors more delicious than strawberries and chocolate. Strawberry ice cream with chocolate fudge is one of my favorite sweets of all time. Throw some cheesecake into the mix? My, oh my. I still can’t get over it.
I have always been super nervous about making crepes. This is totally unfair to the crepe since I never actually tried to make one. That will teach me to not jump to conclusions. Crepes are super easy, especially when they are made in a blender or food processor. I think the words “making crepes” has a way of making you think it’s much harder than it is. It’s a very prestigious name for a glorified and flat pancake. As soon as I stopped judging and jumped on the crepe bandwagon, I was in for life.
You will definitely impress your guests if you make these strawberry cheesecake chocolate crepes at your next brunch. Recipe for these addicting little cuties is below!
Strawberry Cheesecake Chocolate Crepes
Prep Time: 20 minutes
Cook Time: 20 min
Total Time: 40 min
Serves 4
Ingredients
For the Strawberry Cheesecake Filling:
8 ounces cream cheese, softened to room temperature
1 1/4 cup diced strawberries
1 teaspoon vanilla extract
1 teaspoon lemon juice
2 tablespoons granulated sugar
For the Chocolate Crepes:
1 1/2 cups all-purpose flour
1/4 cup good-quality unsweetened cocoa powder
2 tablespoons granulated sugar
1/8 teaspoon kosher salt
3 eggs
1 1/4 cups milk
1/4 cup water
4 tablespoons unsalted butter, melted
1/2 teaspoon vanilla extract
Garnish: strawberries, confectioner’s sugar
Instructions
Prepare your strawberry cheesecake filling first. To the bowl of your stand mixer, with paddle attachment fixed, add all of the ingredients for the filling: cream cheese, strawberries, vanilla extract, lemon juice and granulated sugar. Mix until smooth, with a few remaining strawberry pieces. Set aside or chill for later on. You may also make this filling by hand, by folding the ingredients together with a heavy wooden spoon or rubber spatula.
Next, prepare your chocolate crepes. In the bowl of your food processor, combine the flour, sugar, cocoa powder, salt and eggs. Process until the three ingredients come together. With the food processor running, pour in the milk and water. Continue to pulse until the mixture is completely smooth. Again, with the food processor running, pour in the melted butter and vanilla extract. Pour the batter into a bowl and set aside.
Heat a crepe pan or small 8 – 10″ omelet pan over medium heat. Spray the pan with a non-stick spray before you cook each crepe to prevent sticking. Pour about 1/4 cup of the batter directly into the middle of the pan and swirl to coat the bottom. Cook the crepe for 2-3 minutes or until the bottom is light brown and the edges are completely set. Flip the crepe over and cook for an additional minute. Transfer to a serving platter and repeat for the rest of the batter.
Fill each crepe with the strawberry cheesecake filling and garnish with fresh strawberries and sprinkle with confectioner’s sugar. Enjoy!
These strawberry cheesecake chocolate crepes are a must-have this spring, as strawberries are in their prime! I hope you guys love this recipe just as much as I do! Have a wonderful day, and I’ll see you next month!
