Easy Cheesy Chicken Casserole

 

This easy cheesy chicken casserole is an easy holiday dish, and you can never have too many easy holiday dishes. Am I right? Just a little penne, some traditional marinara sauce, and lots of delicious cheese make this dish a hit for the whole family.

I must say that the best part of the holidays this year has been the fact that I have found so many easy weeknight meals. With my husband and myself both traveling more with our jobs, it has been insane trying to get holiday meals planned. I have made sure that above all else, I have an easy holiday meal planned to take with me to holiday parties.

I guess in an ideal world I would be meal planning over the weekend, but a simple dinner dish like this one doesn’t require much planning ahead. As long as I have my few ingredients on hand, I know I can share a delicious meal for the holidays.

How to Make Cheesy Chicken Casserole

To make this easy cheesy chicken casserole you only need a few ingredients on hand:

  • Barilla Penne Pasta
  • Barilla Red Sauce
  • Galbani Mozzarella
  • Galbani Ricotta
  • Cooked Shredded chicken
  • salt, pepper, oregano to taste

Normally I love a good casserole that I can place in the oven, but since I use cooked chicken breast in this dish, I don’t even have to wait for the oven to warm up.

To get started, I boil the water to get my pasta all good and al dente. After I have drained out the water, I lower the stovetop temp and add in 2 jars of the Barilla red sauce. Stirring constantly. Once the red sauce and pasta are mixed completely, I then add 3 Tablespoons of Ricotta and 1/4 cup of Mozzarella. Allow these to melt together, and then add the cooked chicken last.

I will then cover and cook for 15 minutes to allow all of the cheeses, sauce, and chicken time to melt together. I also like to add a little salt and pepper and oregano to flavor things up a little more.

Once everything is melted together, I then turn the stovetop to low and serve the family. It’s such a quick and easy weeknight meal, and it’s one the whole family enjoys.

Ingredients
  

  • 1 box penne pasta
  • 2 jar pasta sauce Barilla red sauce
  • 1/4 cup mozzarella
  • 3 tbsp ricotta
  • salt, pepper, oregano to taste
  • 2 chicken breasts cooked and cubed

Instructions
 

  • Boil water in a medium saucepan and cook penne pasta until al dente. About 8 minutes.
  • Reduce heat and add both jars of red sauce.
  • Add the cubed and cooked chicken breast and stir. Cook for 10 minutes.
  • Stir in the mozzarella and ricotta cheeses. Mix well.
  • Serve alone or with an Italian side salad.
