Today I am going to rock your world with this delicious and healthy Pesto Chicken Zoodles recipe. This recipe literally takes just minutes to make, and it is one of my new favorite lunch or dinner recipes. It’s Whole 30, PALEO, and it’s another of our Simple Fit Forty recipes, so you can bet your bottom dollar, this is not only good, but it’s also GOOD for you. Made with basil pesto, garlic, parmesan, zucchini, and a little seasoning, this recipe is sure to be one of your new go-to-healthy meals.
This delicious Pesto Chicken Zoodles recipe doesn’t just taste good, it’s also a healthy dinner recipe that is Whole 30, PALEO, and Simple Fit Forty compliant. That means you can eat until your little heart is content without any guilt.

Pesto Chicken Zoodles
To make the pesto chicken zoodles recipe you will need to have a few things on hand:
- 2 large zucchini, spiraled
- 1 Tbsp garlic salt
- 1 tsp Cajun seasoning
- 2 8oz chicken breasts seasoned, grilled, and sliced (batch cook chicken for the week to save time!)
- 3/4 cup fresh basil leaves
- 1 clove garlic, peeled
- 1 Tbsp grated parmesan cheese
- 1/2 cup olive oil (separated into 2 – 1/4 cups)
- salt and pepper to taste
To get started, place 1/4 cup of olive oil into a medium saucepan and allow to heat on medium heat. Once warm, place zucchini in pan and then sprinkle with garlic salt and cajun seasoning. Toss with tongs to get all of the zucchini coated with oil and seasoning. Cover with a lid and steam for two to three minutes. Remove lid, toss zucchini noodles again and then cover for another 2 minutes. Remove from heat.
In the mean time, place the basil, garlic, and grated parmesan cheese into a food processor. Slowly add the olive oil, and then set to the side.
Add zucchini noodles, pesto, and chicken to a medium dish and toss until everything is fully coated. Serve immediately.
This is seriously, SO GOOD!
