Busy nights are always the hardest when I have to scramble for dinner, and this yummy casserole is always a go-to dish. I love to make it ahead of time and reheat the casserole the next day. It makes those busy weeknights a breeze and the family leaves full and satisfied.
I love to make casseroles for dinner. In fact, another of my family favorites is this Taco Casserole. Casseroles are such an easy dish to prep and make ahead of time when you know you will be short on time during the week. This is one of my favorite hearty casserole recipes because it’s full of flavor and disappears fast.
Ingredients Needed:
- olive oil
- lean ground beef, cooked
- sour cream
- kernel corn
- cream of mushroom soup
- green onion tops
- Monterrey Jack cheese
- ground black pepper
- onion powder
- oregano
- white pepper
- bag of frozenTater Tots
- salt and pepper to taste
- bacon bits or fresh crumbled bacon
How to make Bacon Cheeseburger Tater Tot Casserole
- Heat the oven to 350 degrees Fahrenheit. Prepare the casserole dish with nonstick cooking spray and set it aside.
- Add olive oil and beef to a large skillet and brown ground beef over medium heat. Remove from heat when cooked and drain excess grease. Set aside.
- In a medium bowl combine corn, soup, beef, sour cream, 2/3 of the bacon, seasonings, 1 cup of cheese, and 2 tbsp of the green onion tops. Mix well.
- Spread mixture into a prepared 9 x 13 baking dish or casserole dish. Sprinkle a little extra cheese on top.
- Cover the beef and cheese mixture with a single layer of tater tots and remaining real bacon bits. Sprinkle with salt and pepper to taste.
- Bake uncovered in the oven for 50 minutes, or until the frozen tater tots are cooked and golden brown.
- Add the remaining cheese and green onion tops to the casserole and place in the oven for an additional 5 minutes or until the cheese is melted.
- Serve warm.
TIP: Change this dish up by adding in different ingredients such as diced dill pickles or butter pickles, cheddar cheese soup instead of mushroom soup, and 2 cups cheddar cheese for a little more flavor over the Monterrey Jack cheese.

- 2 cups Monterrey Jack cheese shredded, divided in half

- 1/2 tsp white pepper

- 32 oz tater tots frozen
