There’s no denying that air fryer potato pancakes are a winning recipe. I’ve been making these yummy potato cakes for as long as I can remember and I haven’t gotten tired of them yet.
One of the best parts of this simple air fryer recipe is that the potato mixture is really easy to make. This is also a great way to use up leftover potatoes, too! I use this as a delicious side dish to pair up with any meat entree and I like to switch it up and make this instead of french fries all the time.
Use these crispy potato pancakes as a simple way to cook up a simple side dish. Who knows – the kids just may like these crispy latkes better than actual pancakes that they eat for breakfast!
Air Fryer Potato Fritters
There’s a reason that this is at the top of my favorite delicious recipes list. With a crispy outer crust and a fluffy center, it has all the textures in each and every bite.
You’re about to find out how fast and simple it can be to make the perfect potato pancake in your air fryer using grated potatoes!
Ingredients
- potatoes
- all purpose flour
- green onions
- egg
- salt
- ground black pepper
- olive oil
These air fryer potato latkes will have you digging in and enjoying them in no time at all. This easy recipe is the perfect way to make use of leftover mashed potatoes as well.
Air Fryer Mashed Potato Pancakes Recipe
Shred the potatoes using a box grater or handheld grater and set them aside. Prepare the air fryer basket with nonstick spray or with parchment paper.
Add the potatoes to a small bowl of water and then soak the shredded potatoes in cold water for about 30 minutes to remove the excess starch.
Drain the potatoes and then use a cheesecloth, clean dish towel, or strong paper towel to squeeze out and remove the remaining excess water.
In a medium-sized bowl add the shredded potatoes, egg, flour, green onion, salt, and pepper.
Mix well.
Use a cookie scoop (or about 2 Tbsp) of potato pancake batter and scoop potato patties into a single layer onto the prepared air fryer basket and form into patties.
Spray the tops with oil before air frying.
Air Fry Potato Fritters at 350 degrees Fahrenheit for 10-12 minutes, or until the tops are golden brown.
Allow the fritters to cool for a minute before carefully removing them from the basket of the air fryer and then serve with your favorite dipping sauces.
NOTE: This recipe was made using a 5.8 Cosori Air Fryer. If you’re using a different air fryer, please note that you may need to alter the time by a minute or two for your brand of air fryer.

Can you use sweet potatoes in place of regular potatoes?
Great question. I would say yes to that question! Any type of potato or leftover potato would be fine. As long as you can mash it, you can air fryer it!

What toppings go well with these leftover potato cakes?
This all just depends on what you like. Some people add nothing and just pick them up and eat them while others add sour cream, bacon bits, parmesan cheese, chopped cooked bacon, hot sauce, cheddar cheese, and more!
How do you get excess water out of shredded potatoes?
Once you shred the potatoes, you can squeeze them or put them between two paper towels and press. Getting out the excess water will help them to fry up nice and crisp in the air fryer.
