Skillet Beef and Bean Taco Casserole

This beef and bean taco casserole is made in a skillet and then served on a bed of lettuce with cheese, peppers, onions, and more. I love this Skillet Beef and Bean Taco Casserole for many reasons. It’s easy to make, it’s a perfect weeknight meal, everyone loves it, and it’s just downright deliciousness in a skillet. You can’t ask for a tastier meal. It’s one of my favorite quick dinner recipes.

Beef and Bean Taco Casserole Recipe

Ingredients for Beef and Bean Taco Casserole

Here is what you are going to need for this dish:

  • ground beef
  • fat-free refried beans
  • restaurant-style salsa
  • taco seasoning mix
  • tortilla chips
  • bell pepper
  • diced tomatoes
  • Monterrey Jack cheese
  • shredded lettuce
  • green onions

How Do You Make a Taco Casserole?

1. Heat the oven to 350. In a medium pan cook ground beef until thoroughly cooked. Drain.

2. Stir in salsa, taco seasoning, and refried beans, mix well and stir often.

3. Place 2 cups of crushed chips into the bottom of the prepared skillet. Cover evenly with beef mixture and top with bell pepper, onion, 1/2 can of diced tomatoes, and cheese.

4. Place skillet in oven and bake for 20 minutes, or until cheese is melted.

5. Top the casserole with remaining diced tomatoes, remaining tortilla chips, onion tops, and cheese.

6. Place shredded lettuce in a bowl and top with Beef and Bean Taco Casserole. Oh my, yumminess!!

Skillet Taco Casserole Tips

  • Use a low-fat beef such as 93/7
  • Crush chips by placing them in a ziplock bag and carefully pound with a rolling pin
  • Spice things up with red, yellow, and green bell peppers
  • You can easily double or triple this recipe for larger crowds
  • Store leftovers for meal prepped lunches

Taco Casserole Alternatives

  • Use lean ground turkey or chicken in place of beef
  • Alternate cheddar or Monterrey Jack cheeses
  • Try flavored lime or blue tortilla chips
  • Change up the toppings by adding avocado, sour cream, or even green chilis if you’re feeling feisty.

How to store leftovers

Store leftovers in an airtight container in the refrigerator for up to 4 days. Consider changing up the toppings to make a different lunch dish every day!

  • 1 package taco seasoning mix
  • 2 1/2 cups tortilla chips lightly broken in small pieces, not crushed
  • 1 medium green bell pepper half/chopped
  • 1 15oz can petite diced tomatoes (drained)
  • 1 cup Cheddar or Monterrey Jack cheese
  • 1 cup shredded lettuce
  • green onions
