I really love how moist this cake it, and there’s nothing like homemade cream cheese frosting. It literally elevates that flavor of the cake and really makes that strawberry taste “pop”!

INGREDIENTS NEEDED FOR STRAWBERRY CAKE AND CREAM CHEESE FROSTING
I can assure you that this is a simple strawberry cake recipe to make. Just follow along with the simple directions below and you’ll be good to go.
Just make certain to let it cool down completely before starting to frost it or the frosting will just melt right off!

INGREDIENTS YOU NEED
- Strawberries
- White cake mix (and ingredients needed for cake, minus the water)
- Cream cheese
- Unsalted butter
- Powdered sugar
- Strawberry reduction
- Vanilla flavoring
- Strawberries for garnish
STEP BY STEP PHOTOS
Heat oven to 350.
Remove stems from strawberries and blend them in a mixer.
Place the blended strawberry liquid into a small saucepan and heat on medium-high heat. Stir constantly until boiling. Stir and boil for 1 minute.
Remove from heat and allow to cool. You should have about 2 cups of strawberry reduction. Separate into 1 cup each.
Bake the cake.
Make the cake mix as instructed and replace the one cup of water with one cup of strawberry reduction. Mix well. Bake the cake as instructed in two 8” pans.
Cream the cheese and butter.
While the cake is baking, cream together the cream cheese and butter in a stand mixer. Add 3/4 cup of strawberry reduction and the vanilla. Continue to mix.
Create Strawberry Cream cheese frosting.
With the mixer on low speed, start adding the confectioner’s sugar 1/2 cup at a time. You should reach the preferred consistency with about 7 cups. Add a little more sugar if needed for a thicker consistency. Cover and place into the refrigerator.
Cool cakes.
Once cakes are finished baking allow them to cool on a wire baking rack. Once cooled, carefully cut off the tops of the cake.
Create layers for the cake.
Grab the frosting and add a layer of frosting onto the bottom layer and then top with freshly sliced strawberries.
Top with the second layer of cake.
Carefully frost the sides and top of cake and garnish with strawberries. Slice and serve.
Place leftovers in the refrigerator.
Save any leftover frosting and refrigerate covered in an airtight container. Use within 5 days.
Leftover frosting is perfect for homemade donuts or cupcakes!

How long will leftover cake last in the fridge?
I have a rule of thumb to try and eat leftovers within 3 days of baking or cooking them. To me, this is just the perfect timeframe for things to stay fresh and have the most flavor.
If you’re worried that it’s not enough time, share some with your neighbors or even put a few slices in the freezer for later.
Why is my frosting so thin?
If you’re not liking the consistency of your frosting, just add in a little more sugar slowly as you’re mixing. That will thicken it up and you can stop once you have a thickness that you like.
