Easy Spinach Stuffed Chicken Breast
For the protein in our date night dinner, I’m sharing a recipe for quick spinach and feta stuffed chicken breast. It’s literally the easiest recipe ever and it’s sure to impress your significant other. A quick mashup with fresh chopped spinach, feta, cream cheese, some spices, and garlic creates a fresh spinach mixture dip-like filling that can’t be beaten.
A quick sear in an ovenproof skillet gives the chicken a crusty golden exterior then you’ll pop it in the oven to finish cooking. If you’re anything like me, be super careful after you’ve taken the skillet out of the oven to not forget it’s BEEN IN THE OVEN and grab the handle, that’s the WORST. I swear I do that every single time I cook something in a skillet in the oven.

Easy Stuffed Chicken Breast Recipe
I love this easy stuffed chicken breast recipe. To make this quick date night dish you need to have a few ingredients on hand:
- chicken breasts
- spinach (minced)
- cream cheese
- onion powder
- minced garlic
- sea salt
- red pepper flakes
- olive oil
I love how fast this recipe comes together. Just a few minutes to prep and then the rest is done for you in the oven. (Which is when we finish up the sides and salad for this date night dinner.) 🙂
How to Make Spinach Stuffed Chicken Breast
Total Time: 30 minutes
Preheat oven to 425 degrees Fahrenheit.
In a medium bowl mix together all ingredients except chicken. Cut a pocket into the sides of the chicken breast and stuff the chicken with the spinach and cheese mixture.
Heat the olive oil in a large ovenproof skillet, sear the chicken 5 minutes per side then transfer to the oven and bake for 15 minutes or until the chicken is cooked through.
I like to serve this feta and spinach stuffed chicken breast with a light side salad topped with a bit of extra feta, a drizzle of quality olive oil, a dash of salt and pepper, and a splash of vinegar (balsamic or red wine works great).
I also like to top the butternut squash with an extra pinch of brown sugar on top, totally not necessary but I love the sweet crunch!

- 3 oz feta
- 3 oz cream cheese
- 1/2 tsp onion powder
- 1 clove garlic minced
- 1/4 tsp sea salt
- 1/4 tsp pepper
- 1/4 tsp red pepper flakes
- 2 tbsp olive oil
- Preheat oven to 425 degrees Fahrenheit.
- In a medium bowl mix together all ingredients except chicken. Cut a pocket into the sides of the chicken breast and stuff the chicken with the spinach and cheese mixture.
- Heat the olive oil in a large ovenproof skillet, sear the chicken 5 minutes per side then transfer to the oven and bake for 15 minutes or until the chicken is cooked through.
- Be careful when removing the skillet from the oven, it will be HOT.
- Double this recipe and refrigerate leftovers in an airtight container in the refrigerator for up to 3 days.
